海抜500メートルのレピニ山の丘に位置する小さな中世風の町ソンニーノにチェトローネの農園はあります。 100ヘクタールの広さの農園に20000本のオリーブの古木があり、イトラーナ種という単一種のオリーブがチェトローネ一族の情熱と長年培われた栽培方法で大切に育てられています。 チェトローネのオイルは、オリーブの実の80％が緑である11月から12月初めに手摘みされ細心の注意を払って選別され、その日のうちに低温圧搾法で絞られます。早摘みのものはフルーティーさが強く特性として出るようです。色は深いグリーンで、アロマはフルーティーで青リンゴの香りがします。味はフルーティーで強く、アーティーチョークとセージの香りが感じられます。酸度が0.09以下という驚くべき低さ。

Cetroni’s estate is located in the small medieval hill town of Sonnino, perched 500 meters above sea level in the Lepini Mountains. Across 100 hectares of land, 20,000 ancient olive trees are cultivated with care and dedication. The estate grows a single variety, Itrana, nurtured through generations of passion and refined cultivation methods by the Cetroni family.
 
Cetroni olive oil is produced from olives that are 80% green, hand-harvested between November and early December. Each olive is carefully selected and cold-pressed at low temperature on the very same day. Early harvesting gives the oil its pronounced fruity character. It displays a deep green color, with aromas of fresh green apple. The flavor is bold and fruity, with notes of artichoke and sage. Remarkably, the acidity level is below 0.09%.
 
This oil has received the highest “Three Leaves” rating from Italy’s most renowned gourmet publication, Gambero Rosso, in its olive oil guide. It has also achieved top scores in the prestigious FLOS OLEI olive oil guide.
